Blackberry Processing

Mom comes out here and makes tons of blackberry jam each summer for her yearly sale in Colorado, where she lives.

Here are 21 qts of blackberries ready for processing.

Here are the empty picking buckets.

Mom first washes the berries then runs them through a Squeezo to remove almost all of the seeds and make a puree. We'd done a pick a couple of days before, so we now know that 32 qts. of blackberries...

Makes 49 1/2 pints of jam!

She is also experimenting with a sugar free option using Splenda and Pomona Universal Pectin. It turned out really well.
